假丝酵母属 Candida

类似酵母的半知菌类的一属。根据生长条件，变成酵母形式或成为比较短的菌丝状。在酿造厂等糖类多的场所，可作为一种杂菌出现，同时也是假丝酵母症的原因而引入注意。富于水解酶，可从淀粉等多糖强力地分解至双糖和单纯的配糖体。除此外还可进行酒精发酵，也能以醋酸等作为良好的碳源而进行蛋白质的分解。
